I was incorrect that not connecting the Outlook. It just took about an hour for my IMAP e-mails to stop syncing. Disconnected phone and iPad as mobile devices from outlook. See above. I didn't realize this at first so I went through and updated everything and installed Outlook and added my accounts.
When I figured out I was just on the wrong hard drive I booted back to my SSD and the problem seemed to start happening a couple days after this. I don't know if this is related at all.
